New rotisserie restaurant, Kuku Riku opens in Camden Market to wide acclaim

SPRING 2019: New rotisserie restaurant, Kuku Riku opens as Camden Market continues to revitalise its North Yard food and drink offering.

The 70 cover, dine in and take out restaurant, which boasts an open kitchen and exposed rotisserie is the first in the UK to pioneer the Josper charcoal oven cooking method. Starring as the centrepiece of the new venue, the Josper charcoal oven combines intense heat generated in the base of the oven with the burning charcoal below the rotisserie to produce the distinct, charring and smoky flavour that sets it apart from other rotisserie restaurants. Freshly basted and marinated daily in the Kuku Riku’s secret marinade, chickens are served whole for take away or by the half or quarter.

Signature menu items include the 24 hour marinated rotisserie baby chicken, buttermilk chicken breast burger served in a brioche bap with garlic mayonnaise and succulent buttermilk marinated chicken wings, which are glazed to order with sriracha, honey and soy. Sides have been carefully considered to compliment the mains, and span from the comforting – smoked sea salt and thyme roasted Hasselback potatoes and ‘ultimate mac and cheese’ (made with a mix of stilton, parmesan and Barber’s cheddar) to surprising twists on seasonal vegetables -‘lemon, cumin and caper charred cauliflower’ and ‘roasted winter squash with salsa verde.’

The new rotisserie restaurant joins recent new comers The Camden Grocer (fine foods luxury delicatessen and café) and Camden Town Roadkill (independent butchers and steak grill); both of which have opened in the last month as part of a wider initiative to revitalise the North Yard’s food and drink offering. The revitalisation is being led by the Market’s new F&B team, headed up by Commercial Director Maggie Milosavljevic (former Operations Manager, Harrods) and Executive Chef, Alistair Dibbs (former Executive Sous Chef, Harrods) and aims to curate a ‘London go to’ for artisan, quality food products and further evolve the existing offering with the addition of new restaurants, cafes and shops that champion locally sourced ingredients, demonstrating the culinary creativity of its in-house chef teams.

Executive Chef Alistair Dibbs has overseen the development of the Market’s new rotisserie concept and worked with the Market’s culinary in-house team to create a menu that fuses his devotion to using the best seasonal, locally sourced ingredients with his passion for developing interesting new dishes that are served alongside tried and tested classics.

Originally from Leicester, Alistair began his culinary career in his hometown in the Midlands. Following an internship at the prestigious Relais & Châteaux Hôtel de la Plage in France, Dibbs went on to develop his skills further at Michelin-starred establishments including Fischer’s Baslow Hall and Pied à Terre, and 5 star restaurants Hibiscus and Le Manoir Aux Quat’Seasons. Arriving at Harrods as Executive Sous Chef, Dibbs has spent the last five years working on in-house collaborations with high profile chefs including Tom Kerridge, Tom Kitchin and Ollie Dabbous, and has also spear-headed the launch of the brand new Food Halls, which boasts one of the largest kitchen teams in Europe.

The new opening further adds to the Market’s vision to provide its local, London-based visitors with a strong, reliable offering of fine foods and quality produce, all year round. Kuku Riku is open 7 days a week, from 11.30am to 8pm, later in the summer months.

Kukk Riku joins other recent new additions to Camden Market’s North Yard which include a fine foods deli (The Camden Grocer) and new independent butcher & grill (Camden Town Roadkill) serving restaurant quality steak baguettes and Dexter aged beef burgers to go.

Elsewhere in the Market, a new 100% vegan artisan bakery (Nora & Nama) in the market’s international street food line up, in its West Yard welcomes Yorkshire Burrito (full roast dinner served up in a yorkshire pudding wrap.)
